Well...I do not call all that I am putting here as my "invention" but "Inspired". This is also the reason I call this section as fusion and not authentic. After reading a few recipies if you realize that this was done by so and so in such and such way...very much possible, just that the version written here will be my way of doing it!!! If you like, you can go ahead and add "your touch" to all my food..but trust me I have done enough experiemnt with it before putting it up here !

Messed Up Main Course and Happy Chicken


I am calling it messed up or whatever you want  chicken and rice because that’s how I invented it. Heads up, you will need to do a lot of soaking and draining and separate cooking and marinating.

Ingredients:
For Rice:
1. Rice – for 2 people,  soaked for ½ hour
2. Arhar Daal -3 Table spoon, soaked for 1 hour
3. Red Lentils – 2 table spoon, soaked for 1 hour
4. Resins – 10
5. Black Pepper
6. Olive Oil – 2 spoons
Cook the rice in an open pan with enough water to drain out. Add resins and 1 spoon olive oil when it boils. When cooked drain the water and keep aside. Similarly, cook the lentils together with black pepper, olive oil and little salt. Here salt is used as a softner and not for taste. Drain the water away and  mix with the rice. Keep in a hot case or oven so that it remains warm. Alternatively cook it at last.

For the Sauce:
1. Carrot – 1 medium, thick sliced.
2. Capsicum – 2 small
3. Onion- 2 medium, diced
4. Garlic – 10 to 12 medium cloves
5. Chicken Masala and Garam Masala – ½ teaspoon
6. All purpose seasoning – ½ teaspoon
7. Salt – To taste
8. Sugar – 1 spoon
9. Green Chilly – 2 medium hot, slit (optional)
10. Soy – 2 spoons
11. Chilly powder or Flakes – ¼ tea spoon
12. Cheese – 2 table spoon - you can use any spread at home or grated mozarrala or cheddar
13. Butter – 1 spoon
14. Olive oil – 1 spoon
15. Vegetable Oil – 1 Spoon
16. Diced Chicken – ½ of  a small breast piece or one thigh section.
Heat veg oil, olive oil and butter in a sauce pan. When the butter melts add the onion and garlic. Stir for 30 secs and add the chicken. Add 5, 6,7,8, 10, 11 . Mix well and cover. Cook in medium heat for 5 to 7 minutes. Add the vegetables and green chilly; mix well. Keep it covered while cooking. It may seem like steamed but trust me it is not.  Once you feel that chicken is almost cooked add 2 big cups of water; about 300 ml. Cook till it boils and reduces to 1/3rd of the original qtty. Check for salt and taste. Adjust with what you need. If you are adding anything additional, remember to add another ½ cup water so that the temperature reduces and the taste is infused. Once it comes to boil, add the cheese and wait till it melts. Remove from flame and keep aside.

Note: In place of chicken and water, you may use chicken stock. But my personal advice would be, do not do it. 

CHICKEN
1.  Leg or Thigh – 2 big pieces
2. All purpose Seasoning – 1 spoon
3. Soy – 1 spoon
4. Salt – to taste
5. Lemon Juice – ½ cup
6. Chilly Powder – To taste
7. Corn flour : All purpose Flour = 4:1
8. Oil to fry
9. Bread crumb or Powdered araroot biscuit.
Make cuts in the chicken and mix with salt. Add the lemon juice and coat the chicken well.  Add soy, seasoning and chilly flakes. Mix well. Cover and set aside to marinate for about 3 hours.
Mix the flour with water to make a batter.


Tomato Mix
1. 1 big tomato diced.
2. 4 chillies chopped
4. pinch of salt
5. pinch of thime and oregano
6. olive oil – 1 spoon

Sauté the tomato with 4 and 5 and mix with the green chillies. Keep aside. 

Now use your creativity, plate them all and serve... They look good trust me !

Chicken Rolls


    Well, each time I see rolls, I see the chicken inside. So this time, I thought what would happen if I put the chicken out and the rest of the stuff in? :-)… Nothing it turned out absolutely brilliant. So here you go. Try and let me know..
    Before baking
    INGREDIENTS:
  1. Mashed potato - You can use the ready to eat version as well.
  2. Chopped beans, carrot, green chilly and onion.
  3. Chicken thigh pieces, de boned.  This should come out as a flat piece.
  4. Butter - for greasing
  5. Olive Oil
  6. Salt
  7. All purpose seasoning
  8. Cream and Water
  9. Tooth picks
  10. Ready to go!!
    METHOD:
  11. Mix 1 & 2 together with some salt and this should come out like a dough ( similar to a cutlet mix).
  12. Put this mixture in the Chicken pieces and make a roll, half open. You can close this with the help of the toothpicks.
  13. Grease the backing tray with some butter.
  14. Place the rolls and pour some oil on each roll.
  15. Bake this by turning the side after every 6 to 8 minutes. Total Baking time at least 30 to 45 minutes.
  16. When you are 60% done and feel that the food is drying up, pour the water and cream mixture on it.
  17. Also add some all purpose seasoning.
  18. You are done...Eat!

Some Kind of Wrap


Well, this is one of my experiments coming out brill!! My personal Favorite and I love it.
So here you go. I think  this should be dedicated to bachelors with minimum kitchen..


INGREDIENTS:
  1. Chicken - Boneless Thigh pieces. ( I hate chicken breast, if you like you can use them).
  2. Olive oil - about a small tea spoon per piece.
  3. All purpose seasoning - you will get it in any super market.
  4. Spring roll wrappers - This also you get in a super market.  ( You can make them at home as well, in case you need to know how to do this, refer to any of my dim sum / dumpling/ momo recipes.)
  5. Cream Cheese
  6. Of course, Salt


METHOD:

  1. Mix oil, salt and all purpose and the chicken pieces.
  2. Bake this mixture in a pre heated oven till cooked. It takes me about 30 minutes. 
  3. Let the chicken cool and once cooled, break them into pieces.
  4. Spread cream on the wrapping sheets, fill in some chicken and make the roll.
  5. Toast it on a flat pan.. The same way you would toast a tortilla wrap. Or a sandwich.

Ta da… go and grab it… great thing for your kid's lunch box, break fast and any time snacking!!

Vegetable Chicken


The name of this center piece was invented by my Hubbby... He loves the chicken part and feels that the Vegetable part is waste and that is my fav! This recipe is like my marriage...not fit to be together ( because they are absolutely opposite)  but tastes best only when together .


INGREDIENTS:

  1. Chicken pieces, as you like.
  2. Assorted Vegetables ( I suggest carrots, brocolies, cauliflowers, baby potato, cucumber, green beans, mushrooms, capsicum, bell peppers ) diced.
  3. Tomatoes - small sized, I add about two for four people. Else add cherry tomatoes if you love them. 
  4. Soy sauce - 2 table spoon.
  5. Salt - as per your taste.
  6. Olive Oil - 2 big table spoons
  7. All purpose seasoning - as much as you like
  8. Onion - diced, about 2 for 500 gms of chicken.
  9. Garlic - if you like, about 10 cloves for 500 gms of chicken.
  10. Corn Flour -  3 table spoons.
  11. Cream - 2 table spoon
  12. Milk - 1/2 cup ( tea cup and not coffee mug.)


METHOD:

  1. Braise the cleaned chicken pieces with Oil, soy and salt.
  2. Put them on a backing tray and put in a pre heated oven for 15 minutes.
  3. After 15 minutes, take the tray out,  put all the vegetables with onion, mushroom and tomatoes.
  4. Make sure the vege and chicken is evenly spread.
  5. Sprinkle some more salt and about a pinch of sugar.
  6. Put the tray back into the oven.
  7. When your food is 90% cooked, take the tray out once more.
  8. Now mix milk and Corn Flour.
  9. Pour this sauce on top of your chicken and vege mix.
  10. Pour the cream on top.
  11. Bake it for about 5 to 10 minutes more depending on how you like it.
  12. Serve along side garlic or any other kind of bread and salad. 

Chilly Chicken - My Way


Ingredients
Boneless chicken cut into small cubes(1 whole chicken)
1 tablespoon tomato sauce,
1 tablespoon chili sauce,
2 tablespoons Soya sauce,
2 tablespoons vinegar
Salt to taste,
6 green chilies
4 big onions (chopped),
1 heaped tablespoon corn flour,
2 eggs,
1 teaspoon ajinamoto,
Refined cooking oil
Preparation
Wash the chicken pieces and dry them. Marinate the pieces with 1 tablespoon Soya sauce, 1 tablespoon vinegar, 1/2 tablespoon tomato sauce, 1/2 table spoon chili sauce and enough salt.
Beat the eggs and pour them on the chicken pieces. Add half a tablespoon corn flour and mix well the whole mixture. Allow it to stand for 2 hours.
Drain excess liquid and store in a container. Heat oil in a pan and fry the chicken pieces. Keep the fried pieces in a separate container. In the left over oil fry the green chilies and chopped onion slightly. Pour the excess liquid stored earlier. Stir continuously. Add the chicken pieces. Pour the rest of the sauces and a pinch of salt. Mix the 1/2 tablespoon corn flour with a little of water and pour in the pan. Add the ajinamoto. Stir well and serve hot.

Garlic Chicken

Ingredients

2    chicken breasts, cut into chunks
8    cloves garlic, crushed
1    tablespoon oyster sauce
1  tablespoon vinegar
1    tablespoon black soy
1    teaspoon salt
5    tablespoons oil
1    tablespoon sesame oil
1/2    cup water

Preparation 1.  Heat oil and fry garlic until brown, remove. In remaining oil fry chicken until cooked.
2.  Add oyster sauce, vinegar, soy sauce, salt, water, garlic and sesame oil and simmer for 10 minutes 

Chicken in Curd


Ingredients:
1  cup curd / yogurt
1/2 Kg Chicken
Salt and Turmeric to taste
1 Tsp Red Chilly Powder
1 tsp coriander  powder
1 tsp Jeera Powder
2 -3 Green chilies, spit
2 Onions Chopped
2 tsp Ginger Garlic Paste
Oil for frying
Preperation
Mix everything, but salt, green chilly and Onion. Keep them for 30 Minutes. heat oil in a Pan. Add the onion and fry till transparent. Add the mixture and fry in a low Flame. The chicken will start leaving water initially. Once the water dries up add salt and green chilly. Cover and cook till chicken is tender. Garnish with green coriander leaves, chopped.
Serve with green chutney.
